BBQ Chicken Nachos are perfect for sharing with friends at a party or as a hearty main meal. They’re stacked with layers of crunchy tortilla chips, cheese and BBQ sauce, melted cheddar cheese, shredded rotisserie chicken, jalapeno, and chopped red onion.

Use this mouth-watering recipe as a base for building your own nachos with your favorite toppings!

Variations:

  • Instead of shredded chicken, use shredded turkey or pulled pork. You can also enjoy ground beef, pork, turkey, or ground chicken in this recipe.
  • Standard white tortilla chips are great for any nacho recipe but feel free to also use blue tortilla chips which become quite popular towards 4th of July.
  • Consider adding other toppings such as corn and black beans.
  • Turn this dish into a vegetarian nachos meal by omitting the chicken and adding other ingredients such as beans, diced tomatoes, finely chopped red bell pepper, chopped green onions, and chopped radishes.
  • Add an extra kick of heat to these BBQ chicken nachos by using a hot sauce or topping the nachos with spicy ingredients like a hot salsa.
  • While I’ve used cheddar cheese, you can use your favorite cheese. Mozzarella, crumbled feta, or a Mexican cheese blend would work well.

Loaded BBQ Chicken Nachos

Ingredients

  • Cheese Sauce store bought or homemade
  • 1 bag tortilla chips
  • 1 cup shredded rotisserie chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 large jalapeno seeded and minced
  • 1/4 cup red onion chopped
  • 1 tablespoon fresh parsley chopped
  • Optional Toppings
  • Guacamole
  • Pico de Gallo
  • Sour Cream
  • Lime cut into wedges
  • Jalapeño seeded and sliced into rings

Instructions

  • Preheat oven to 375°F Spread half of the tortilla chips in an even layer on an oven safe platter or baking sheet.

  • Scatter half of The Chicken Overthe top.

  • Drizzle half of the BBQ sauce and half the cheese sauce over the chicken.

  • Sprinkle half the cheddar cheese, jalapeño, and onion over the cheese and BBQ sauce.

  • Repeat with a second layer of everything.

  • Put the nachos into the oven and bake for 10 minutes.

  • Sprinkle with fresh parsley.

  • Serve with lime wedges,guacamole,pico de gallo and sour cream.
