I can’t get enough of freshly made, homemade guacamole and using it to top a plate of hot, cheesy tortilla chips to make guacamole nachos is the ultimate! In this post, I am sharing my go-to guacamole recipe along with how to make the perfect cheesy nachos so that you can enjoy them for an appetizer, snack, or meal.

Homemade guacamole

One thing friends and family always ask me to make when they visit is a big bowl of homemade guacamole because they say it tastes just as good as any restaurant and who doesn’t love to snack on chips and guacamole?!

There is something about the combination of these simple ingredients together that is down right irresistible. Guacamole goes well with chips, enchiladas, tacos, ground beef taco dip, and of course, nachos!

Guacamole is one of those dishes that everyone seems to have their own version. This version includes just a few simple, fresh ingredients that pack a big punch. The most important thing is to choose ripe avocados for the best flavor.

How to choose a ripe avocado

The key to picking the perfect, ripe avocado is all in the feel. When you press on the avocado, it should give just a little but not feel mushy. If it feels firm, that means it’s not quite ready to eat.

If you need to ripen an avocado quickly, put it in a paper bag with a banana. This helps to trap the ethylene gas that will speed up the ripening process.

How to make guacamole nachos

You can’t mess up this super simple recipe. The ingredients needed include:

  • Avocados – Ripe avocados are needed to make this recipe.
  • Lime juice – Fresh lime juice is best.
  • Onion – I like using a red onion but you can substitute with yellow or white onion.
  • Cilantro – Fresh cilantro is optional.
  • Jalapeno – Make sure to remove the seeds from the jalapeno if you don’t like spicy food.
  • Salt – A little salt helps to bring all of the flavors together.
  • Garlic– Minced garlic is used but you can substitute with 1/2 teaspoon of garlic powder if you are in a pinch.
  • Tortilla chips – Use your favorite tortilla chips.
  • Shredded cheese – I recommend shredding your own cheese for the perfect melt. I am using Colby Jack cheese but you can substitute with a Mexican blend, Monterey Jack, or Cheddar cheese.

Step one: Preheat your oven to 375 degrees F. Line a cookie sheet with aluminum foil or parchment paper. Spread the tortilla chips on the foil and top with the shredded cheese.

Step two: Bake the nachos for about 3-5 minutes or until the cheese melts.

Step three: To make the guacamole, scoop out the avocados into a large bowl. Pour the lime juice on top and mash using a potato masher or the back of a fork.

Step four: Stir in the onion, jalapeno, cilantro, garlic, and salt.

Step five: Scoop the prepared guacamole on the nachos and serve with your favorite toppings.

  • Make sure to try and use fresh avocados. Give them a little squeeze and if they have a little give to them, they are perfect.
  • Try and use freshly shredded cheese. This makes a world of difference. It just melts better and has more flavor.
  • You can easily adjust this recipe to taste. Feel free to leave out the cilantro or jalapeno if you don’t like these ingredients.

Ingredients

Guacamole

  • 3 ripe avocados
  • 2 tablespoons lime juice
  • 1/2 red onion, diced small
  • 1 clove minced garlic
  • 1/4 cup fresh, chopped cilantro
  • 1 tablespoon minced jalapeno
  • 1/2 teaspoon salt

Nachos

  • 1 bag tortilla chips
  • 2 cup shredded Colby Jack cheese

Instructions

  • Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil or parchment paper.

  • Spread tortilla chips on the foil. Top with freshly shredded cheese. Bake for 3-5 minutes or until cheese melts.

  • Scoop the inside of the avocados into a large bowl. Pour lime juice over the avocados. Mash until creamy.

  • Stir in the diced onion, garlic, diced jalapeno, salt, and cilantro.

  • Top the nachos with the guacamole and serve.
