Ingredients

For the Chili

  • 1 lb Ground Beef
  • 1 Small Onion finely diced
  • 4 cloves Garlic minced
  • 1 14.5 oz can Crushed Tomatoes
  • 1 15 oz can Tomato Sauce
  • 1 15 oz can Kidney Beans drained and rinsed
  • 2 tbs Chili Powder
  • 1 tbs Ground Cumin
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper
  • ½ tsp Cayenne Pepper

For the Queso Sauce

  • 1 15 oz jar Cheez Whiz
  • 1 10 oz can Rotel Diced Tomatoes with Green Chilies

For the Totchos

  • 1 2 lb bag Frozen Tater Tots
  • 1 ½ c Frito Corn Chips
  • 3 oz Extra Sharp Cheddar Cheese freshly shredded
  • 6 tbs Sour Cream
  • 2 tbs Green Onions thinly sliced

Instructions

To Make the Chili

  • Brown the ground beef in a large Dutch oven, with a lid, over medium heat until fully cooked. Drain the browned beef in a colander set in your skin.

  • Return the pan to the stove and add the diced onions and sauté for 3-4 minutes. Return the browned beef to the pan and combine with the sautéed onions. Then add the minced garlic and stir to combine with the meat and onion mixture. Sauté for 4-5 minutes, until the garlic becomes fragrant.

  • Add the crushed tomatoes, tomato sauce, kidney beans, chili powder and ground cumin. Stir to combine after the addition of each ingredient. Place the lid on the pot, reduce heat to medium-low, and simmer for 20 minutes.

  • After 20 minutes, add the kosher salt, black pepper, and cayenne pepper. Then stir to combine. Replace the lid, reduce the heat to low, and keep the chili warm while you prepare the queso cheese sauce.

To Make the Queso Cheese Sauce

  • Place a small sauce pan over low heat. Add the Cheez Whiz and Rotel Diced Tomatoes with Green Chilies. Stir to combine and cook for 10 minutes until warm.

To Build the Chili Cheese Totchos

  • Cook the tater tots according to package directions. Divide the tots evenly among 6 bowls, about 16 tots in each bowl.

  • Add ¼ cup of chili on top of the tater tots.

  • Top with ¼ cup of queso cheese sauce.

  • Add ¼ cup of Fritos Corn Chips on top of the queso cheese sauce.
